Rocky Road Brownies! This recipe is from Cuisine at Home. Watch out, they're very rich, and gooey and delicious!
Have a glass of milk ready!
Rocky Road Brownies-
1 stick unsalted butter (1/2 cup)
1/3 cup cocoa powder
1 cup sugar
1 tsp.espresso powder
1 tsp. vanilla extract
2 eggs
1 cup all-purpose flour
1/2 tsp. baking powder
1/4 tsp. table salt
1 cup miniature marshmallows
1/2 cup roasted, salted almonds, coarsely chopped
1/2 cup semisweet chocolate chips
Melt butter and cocoa together in a bowl in the microwave at High power, stirring every 30 seconds until smooth. Stir in the sugar, espresso powder, and vanilla.
Add eggs one at a time, mixing well after each addition. Then add the flour, baking powder, and salt; mix until well combined. Spread batter into prepared pan and bake 20-25 minutes, or just until brownies start to pull away from the sides of the pan.
Sprinkle marshmallows, almonds, and choloclate chips on hot brownies. Heat broiler to Low and adjust rack so it's 8" from the element. Broil brownies just until marshmallows turn golden, about 2 minutes. Remove pan from oven, let cool 20 minutes, then refrigerate until cold.
To cut, loosen brownies from the sides of the pan using a bench knife coated with nonstick spray. Lift the brownies out of the pan and cut with a long, sharp knife.
