Spinach Quiche and a Sewing Weekend!


This quiche recipe is from Paula Deen... so it's no surprise that it is made with lots of cheese...heavy cream... and bacon... fabulous!
 
 
So my sisters and I and our mom had a whole weekend at the cabin, all to ourselves, to sew sew sew!

And we did!



We all felt like we had to make use of every second we had, even eating seemed superfluous!
So many projects were begun and finished...

an apron... baby bib... and purse...
 
 
 
an adorable baby quilt...
 
 
 
another purse... kids drawing case... and shirt...
 
We were productive!
 
 
 
And Mom just hopped around from station to station helping solve problems one after another!
 
 
 
To top it off, Rach brought these cute jars for everyone to make their own pin cushion jars,
too cute!!!

It was soooo nice to be at the cabin too!

Spinach and Bacon Quiche- Paula Deen

Ingredients

  • 6 large eggs, beaten
  • 1 1/2 cups heavy cream
  • Salt and pepper
  • 2 cups chopped fresh baby spinach, packed
  • 1 pound bacon, cooked and crumbled
  • 1 1/2 cups shredded Swiss cheese
  • 1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate



Directions

Preheat the oven to 375 degrees F.

Combine the eggs, cream, salt, and pepper in a food processor or blender. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.

Happy Easter!

 
Happy Easter to everyone!
 
 
Every year it is such a treat to go to my sister's house for Easter, and this year was no different!
 
 
Always something new, and so adorable!
 
 
 
 
Not to mention delicious!
 
 







 
 

Every year we dye eggs with the kids for the Easter Bunny to hide... and they are usually forgotten in the fridge until it's time to throw them out.
Terrible!
 
 
Not this year!
 

Deviled Eggs it is!
 
This recipe has sweet peppers, green onions, dill pickle, parsley, curry, mayo, and paprika.
I still might be the only one eating the eggs at home, but I'll enjoy them while I'm at it!
 
 
I bought this book in college at a bookstore when I was supposed to be studying : )
It doesn't have phenomenal pictures, and it's kind of "old school", but it has all of the good standbys.
 
 
 
I have my eye on the homemade applesauce for the near future : )

Church Supper Deviled Eggs- Down Home Cooking
 
12 large eggs
2 green onions, finely chopped
1/4 cup finely chopped sweet red pepper
1/4 cup dill pickle, finely chopped
1/4 cup mayo
1 tsp. curry powder
1/4 tsp. hot red pepper sauce, or to taste
 
Optional garnishes:
Paprika
Parsley
 
Place the eggs in a large saucepan, cover with cold water, and bring to a full boil over high heat. Remove from the heat, cover, and let stand for 15 minutes or until hard-cooked. Cool eggs immediately under cold running water and peel. Slice the eggs in half lengthwise, then remove the yolks. Refrigerate 6 half yolks for another use.
 
Arrange 18 of the egg white halves on a serving platter. Place the remaining 6 egg white halves and the 18 egg yolk halves in a large bowl. Using a fork or pasty blender, mash the eggs, then blend in the remaining ingredients.
 
Spoon or pipe the mixture into the 18 egg white halves. Sprinkle with the paprika and parsley if you wish. Cover and refrigerate for up to 6 hours.

Pizza Pizza!


This pizza has peaches, basil, a really good ricotta, mozzarella and prosciutto!
 I used premade dough this time, and like to brush the crust with olive oil and sprinkle with coarse salt before baking.


Excellent with a glass of wine!


And this is Malaysian Chicken Pizza.
It is Dom and I's favorite and it is good!!!


The recipe is from Cooking Light. For an easy weeknight dinner it is perfect! If I buy premade pizza dough, and a hot rotisserie chicken from the store, the only thing left to make is the sauce.
I love it!



I hope you're able to fit a little bit of this into your busy weekend!



Malaysian Chicken Pizza- Cooking Light

3/4 cup rice vinegar
1/4 cup firmly packed brown sugar
1/4 cup low-sodium soy sauce
3 tablespoons water
1 tablespoon minced peeled fresh ginger
2 tablespoons chunky peanut butter
1/2 to 3/4 teaspoon crushed red pepper
4 garlic cloves, minced
Cooking spray
1/2 pound skinless, boneless chicken breasts, cut into bite-sized pieces
1/2 cup (2 ounces) shredded reduced-fat, reduced-sodium Swiss cheese (such as Alpine Lace)
1/4 cup (1 ounce) shredded part-skim mozzarella cheese
Basic Pizza Crust 
1/4 cup chopped green onions

Preheat oven to 500°.


Combine first 8 ingredients in a bowl; stir well with a whisk.

( This is where I use the rotisserie chicken instead. ) Heat a nonstick skillet coated with cooking spray over medium heat. Add chicken, and sauté 2 minutes. Remove chicken from pan.

Pour rice vinegar mixture into pan, and bring to a boil over medium-high heat. Cook mixture 6 minutes or until slightly thickened. Return chicken to pan; cook 1 minute or until chicken is done. (Mixture will be consistency of thick syrup.)

Sprinkle cheeses over prepared crust, leaving a 1/2-inch border, and top with chicken mixture. Bake at 500° for 12 minutes on bottom rack in oven. Sprinkle with green onions. Place pizza on a cutting board; let stand 5 minutes.

Spoon Bread, Corn Bread, and a Penny.


This recipe has been on my "to try" list for a while.


It's part corn bread and part corn souffle. I really liked this recipe, but might add a touch more sugar and a little more salt next time.


Perfect with barbeque chicken, green beans, and cheesy baked potatoes!


And Corn Bread... hot out of the oven...
Delicious served plain...


And fabulous with melted butter and honey!!!
I love this recipe!


And this is Penny.
She is so cute! It's just ridiculous!
My sister and her family got her a couple of weeks ago and brought her over for a visit.

Spider Spoon Bread - Down Home Cooking, Reader's Digest
1 cup white or yellow corn meal
1/4 cup all-purpose flour
3 T. sugar
1 tsp. salt
4 cups low-fat milk (2 %)
1/2 cup unsalted butter
3 large egg yolks
1 1/2 tsp. baking powder
1 cup corn kernels
5 large egg whites

1. Preheat oven to 375 degrees. Grease a 12 inch cast iron skillet; heat in the oven.
2. Onto a piece of wax paper, mix the cornmeal, flour, sugar, and slat. In a medium-size saucepan, bring the milk and butter to a boil over moderate heat. Add the dry ingredients in a steady stream, whisking constantly. remove from the heat and transfer to a large bowl to cool.
3. In a small bowl, with an electric mixer set on high, beat the egg yolks with the baking powder until thick and light yellow. Stir into the cornmeal mixture with the corn.
4. In a clean medium-size bowl, with clean beaters and the mixer set on high, beat the egg whites until stiff peaks form. Gently fold into the cornmeal mixture, then spoon into the hot skillet. Bake for 25 minutes or until puffy. Serve immediately, right from the skillet.

Cornbread- (given by a friend, not sure of the original source)
1 cup yellow cornmeal
1 cup flour
1/2 cup sugar
1 T. baking powder
1/4 tsp. salt
1/2 cup butter, cut into 8 pieces

1/2 cup sour cream
1/2 cup milk
1 egg

In a large bowl, mix together first 6 ingredients, cutting in the butter until it resembles coarse meal. Beat together the sour cream, milk and egg until blended. Pour this mixture into the large bowl and stir until dry ingredients are moistened and mixture is blended, about 30-60 seconds. Do not overbeat.
Spread batter evenly into a greased 8 inch square baking pan. Bake at 375 degrees for about 30 minutes, or until the top is golden and a toothpick comes out clean.

Fresh Bread and Some Arizona.


Oh Bread!
Some say, "Man can't live on bread alone"... but this wo-man can! 


Warm bread, fresh out of the oven... I could eat it all day long...


And with butter... even better!



We stumbled upon this bakery on our way to pick up my husband's new bike...
he got a motorcycle, and I got two loaves of bread. Everybody was pretty happy in the end.



Safety first! 



Since our errand sent us to the boonies we decided to hang out there for a little while. It was a stormy day at the lake, my favorite.



As we pulled up my family just happened to be finishing up a day of skiing! It was meant to be. So we all had lunch at the little marina restaurant.



It turned out to be a great day.
